I am going to buy a Philips CDi 210 with a Digital Video Cartridge, a Peacekeeper gun and Mad Dog game (obviously)

Is this all I need for the game to work? Does it matter that the CDi is a model 210?

Consumer models are basically all the same, you can check ICDIA.co.uk to compare the inside and outside differences. Only a handful of old players (The Sony model and the first Philips professional players come to mind) can't be upgraded with DVC.

To answer your question: a 210 player is fine.
